Description

This application is aimed to create a stronger and elastic cheese-like curd without the need of adding curdling salts such as traditional nigari, with better mouthfeel and texture similar to the traditional dairy products. It can be used in combination with different vegan proteins and fibers to produce a variety of clean label and completely vegan products.
