Description

This applications is meant to the production of soft fermented cheese style products with soft grains, similar to soft cottage and ricotta cheeses. The BDF solution improves the texture and the mouthfeel of the product, resulting in a more defined grains and firmer overall texture like the traditional product. It also slightly improves the flavour by reducing the sour sensation. Despite the possibility of a high water content, the final product can have a standard shelf life similar to a traditional cottage cheese thanks to the low pH of the product.
The application also brings the possibility to use different plant-based proteins, like almond, peanut or cashew.
