Description

This flour alternative product is a functional blend based on fava bean ingredients and enzyme that is developed to produce fresh fava bean pasta as a naturally gluten-free alternative to wheat pasta. The resulting product is high in protein and has an incredibly elastic and non-brittle texture, has a high overcooking resistance and has a texture comparable to traditional wheat pasta. The solution can be used as a standalone ingredient or as a fortification product.
