A new BDF video on the application of Probind® TXo Transglutaminase in emulsified products

BDF Natural Ingredients has recently produced a video showing the improvements made when using PROBIND TXo in emulsified cooked products.

The video begins by providing information on product application in a standard sausage recipe, with specific product dosages. Probind TXo doses used in this application comprise only 0.100% of the final product ingredients. In other words, only 1g of Probind TXo is used per 1 Kg of final product.

The video also demonstrates the main improvements obtained from the use of Transglutaminase: Elasticity, Meat Bite and Texture.

Several of these parameters are evaluated using a texture analyzer, which quantifies those improvements made when Probind Txo is used in cooked sausage recipes.

The final part of the video highlights the fact that Probind TXo is a Halal and Kosher approved food ingredient.
