This application enables meat producers to work with off-cuts and discarded meat and fat to obtain a viable commercial product. This new restructured bacon product lends itself to easy slicing sliced, and can be cooked and frozen with excellent results, as shown by tests undertaken at the BDF laboratories.
We have produced a new BDF video to demonstrate the advantages and the practical processes involved in its application.
This new restructured bacon product uses Probind GT 5.0, an allergen-free solution that has been developed to meet our clients’ demands with respect to working on restructured meat with a high fat content. Furthermore, the bond between protein and fat remains stable and strong after cooking.
